Chocolate Cherry Energy Balls

Ingredients:

1 cup raw almonds

1/2 cup dark chocolate chips

1/2 cup dried cherries

2 cups of pitted dates

1/4 teaspoon ground cinnamon

1/8 teaspoon salt


Method:

Add the almonds to a food processor and blend to the consistency you like, smooth or chunky (whatever floats your boat!)

Put almonds into a bowl, then add the rest of the ingredients and process until well blended.  Add the almonds back in and give it a few pulses to blend all ingredients together.  Back into the bowl the mixture goes and roll into 1 inch balls (about 12-15) and pop into fridge for 15 mins to firm up.  These last for about a week in the fridge (if you don't eat them all) or longer in the freezer.

Thai Chicken & Vege Soup (Cold Remedy)

I really thought I had escaped winter without a cold...that is, until a couple of weeks ago.  This is what I concocted to get rid of my germs, oh boy did it work!  

Ingredients:

2 bulbs of garlic, finely chopped

1 inch of fresh ginger, finely diced

1 large onion, diced

1 Tablespoon Extra Virgin Coconut Oil, to saute

1 Teaspoon curry powder, garlic salt & red thai paste

2 Tablespoons Tomato Paste

4 cups chicken stock 

1 Can coconut milk

1 Kg (or thereabouts) of cooked chicken, pork or turkey

4 Cups of veges of choice

Lemon Juice to taste


Method:

Saute onion and ginger in a little coconut oil for about 3 mins on a medium heat, add garlic and spices, cook for a further 3-4 mins.  Add T paste, stock, coconut milk and chicken, veges, then stir and simmer for about 20mins. Be mindful not to overcook the veggies if you still want them to be crisp to the bite!
